This book is not of the calibre of one of Madhur Jaffrey's or Julie Sahni's books, but if you want to venture out of the nursery and already know something about Indian cookery, it is a very worthwhile book indeed. Requires basic methods prior to testing recipes, otherwise exciting recipes. Strangely organized as there is no index or recipe categories.
I have a book from about 20 years ago by Sipra Das Gupta. Best introduction to Indian cooking I could imagine. It is by Meera Blackley titled "Indian Home Cooking". I still use it above all others when I want a new Indian dish. Any book by Sanjeev Kapoor is also good. For some delicious non vegetarian food try out - Tandoor Trails n The Indian cooking by Madhur Jaffery.

This book really is that good, and the recipes are really that well refined and tested
This book really is that good, and the recipes are really that well refined and tested. It's the definitive Indian cookbook, that also separates recipes by region too, which is really awesome. While most recipes in this book don't call for ingredients that are too exotic, there are a couple that come up, such as the super-pungent asafetida (hing) powder, or amachur (mango) powder, etc. While the book says optional on some of these, if you can find your nearest indian/asian supermarket, they'll have what you need. The more you don't leave out, the better and more authentic your food will be! After all, using authentic ingredients is the whole point of exploring a new cuisine!
