Easy, luscious, and healthy- that's my ideal for every meal. I've never seen Ellie Krieger, or Food Network, for that matter, but this looked promising. I love Ellie Krieger- this book comes off the shelf regularly & every time I make any of the recipes they come out delicious! I love her "food style"- it's fresh, & healthy without being "fussy!" Her recipes would honestly fit into a variety of "on trend" food diets- paleo, gf, whole 30 etc- she just does it in a way that comes naturally & isn't intimidating!

This is where Ellie Krieger's So Easy: Luscious, Healthy Recipes for Every Meal of the Week comes in. Krieger has a number of credentials. She is a registered dietitian, and hosts the popular show Healthy Appetite on the Food Network. Krieger is also a New York Times bestselling author and James Beard Foundation and IACP winner. Both recipes were easy to prepare and were full of flavor. I will be making both of these dishes again soon. So Easy is very well written. The photographs are beautiful and the book is laid out well. There is a lot of nutritional information given and the recipes are straightforward and use easy to find ingredients.

Ellie Krieger has done it again. I've tried several healthy recipes from various food network shows and Ellie's are always on top. There are recipes for breakfast, lunch, and dinner and they are arranged in two categories; one for quick 30 minute dishes and one for dishes that require more time. Nice hardback cover book for the price. A lot of images as well.

  • My first recipe that I made from this blew my socks off. It was made using plain greek yogurt, canned red salmon, fresh dill, lemon zest and juice, mayonaise, minced scallions,
    chilled bow-tie pasta, salt and pepper, on a bed of romaine lettuce. I mixed up the dressing in the food processor, then mixed in the scallions, pasta and salmon, put it on the lettuce and wow! was it good, better even than the ingredients sound. No oil or vinegar even but a great tasting creamy dressing nontheless.

    Many recipes use greek yogurt which I love. I made the recipe for cold cucumber soup using greek yogurt and it's delicious. Four cups of greek yogurt with one peeled cucumber, fresh dill, mixed up in the food processor, and some chopped tomato on top. It doesn't get easier than this. I am a fan of cold cucumber soup on a hot day but stopped making it since I didn't want to use all that cream and sour cream my old recipe called for.

    All the recipes in this book are like this, super easy, using ingredients I wouldn't think of using together for a taste sensation that is incredible. There is not one recipe in here I don't want to make. And so easy! These are the kind of light easy recipes I love, that don't involve cooking. Mix them up or combine the ingredients and eat.

    The salad section in particular is great, something as simple as putting chopped strawberries and mozerella cubes on a salad for instance is something creative and delicious. There is also a sandwich section that sounds amazing.

    Fresh healthy ingredients combined in new ways make this book a winner. I will be using this almost every day.

  • We've made only about 10 of the recipes in this book. They are beautiful and TASTE like something you'd receive at a 5-star restaurant but really are very simple to throw together. I've made the Wheat Berry Salad with Lemon-Cumin chicken so many times I can throw it together in 15 minutes. These recipes are phenomenal! They're not your standard meat and potatoes, variation of a recipe you've already tried. They are new and inventive. She creates recipes that use foods I wouldn't even normally like and makes them soooo delicious. I can't wait to start cooking these for all my friends! It really feels as though you're treating yourself to something very indulgent. It's so comforting to know that it's also good for you. I think I'm going to get her other books as soon as I've made all of the recipes in this one. It's definitely worth a try. It's our favorite book right now!

  • Enjoying food and healthy eating can go hand in hand if you know how to do it, and Ellie Krieger obviously knows how to do it well! These recipes are so tasty that they seem like they shouldn't be healthy, and they're so fast that it seems like magic. As a busy mom I sorely needed a recipe guide that would appeal to my junk-addicted kids and wouldn't leave me in the kitchen for hours at a time. It's not preachy, it's not loaded with too many expensive specialty items, and each completed recipe is met with approval from the entire (picky) family. I will definitely look forward to my next Ellie Krieger cookbook purchase.

  • I purchased this cookbook because healthy cookbooks can often be one note. I was looking for something a little more exciting. I have been so happy with this book so far! First of all it has complete meals in it. So it makes meal planning a synch! It also lays out calories and nutrition for a very filling portion. Enough food to satisfy my husband.
    The first recipe I made was a chicken with savory peaches. It was so delicious and totally something I would not have thought of myself. I am so excited for the next week of cooking. I'm really looking forward to digging in.

  • Just received my book last week and I'm enjoying looking at all the recipes. What I love most is that each dish gives you information on
    calories, fat, etc. Most books don't provide that information. Because of the plant paradox way of eating at the moment there are some foods I can't eat, but am able to substitute them into these recipes. Love her books

  • I've already made several recipes from so easy. And yes, they are easy and also delicious and good for you. This is going to be one of my most used cookbooks, for sure!

  • I really like this one. The biggest annoyance I have with it is that there are a couple repeats in this one from past cookbooks. I hope she doesn't have repeats in her next one, but that remains to be seen.

    Most of the recipes are things I will and have tried. I highly recommend it. She has complete meals put together in this book, which isn't quite the same as all others. She's definitely keeping busy people more functional with this one. Good news.
