A pasty (/ˈpɑːsti/ or /ˈpæsti/, Cornish: Pasti) is a baked pastry, a traditional variety of which is particularly associated with Cornwall, United Kingdom. It is made by placing an uncooked filling, typically meat and vegetables, on one half of a flat shortcrust pastry circle, folding the pastry in half to wrap the filling in a semicircle and crimping the curved edge to form a seal before baking.

The pasty is now popular worldwide due to the spread of Cornish miners, and variations can be found in Australia, the United States, Argentina, Mexico, Ulster and elsewhere. Your opinion matters. The idea and reason for the thick pastry crust, was so that a miner in his short lunch break, unable to wash his hands, was just to hold it, eat the pie and dump the crust that was dirty with coal dust.

The pasty has been a documented part of the British diet since the 13th Century, at this time being devoured by the rich upper classes and royalty. The fillings were varied and rich; venison, beef, lamb and seafood like eels, flavoured with rich gravies and fruits. It wasn’t until the 17th and 18th centuries that the pasty was adopted by miners and farm workers in Cornwall as a means for providing themselves with easy, tasty and sustaining meals while they worked. And so the humble Cornish Pasty was born.

The traditional Cornish pasty is filled with beef, sliced potato, swede (also known as a Swedish turnip) and onion, and baked. Pasties with many different fillings are made; some shops specialise in selling all sorts of pasties. The origins of the pasty are largely unknown, although it is generally accepted that the modern form of the pasty originated in Cornwall.

Cornish Pasty is a traditional English pasty and considered the national dish of Cornwall. The most difficult part for me when making the pasties was to crimp the edges of the pastry.
